St Lucia's Green Fig and Salt fish Recipe!

St Lucia green fig and salt fish is mainly comprised of two main ingredients, green bananas and salted fish. Today we will learn exactly how to prepare this delicious dish using our simple recipe. To begin, you must first get a few ingredients.

Things needed/ Ingredients

4lbs of green figs or green bananas

1/4 cup of chopped celery

1/4 cup of chopped parsley

3 cloves of garlic

1/4 cup of chopped seasoning peppers

2lbs of salt fish

1 tbsp of chicken based seasoning

1/4 cup vegetable oil

PREPARATION :

Remove the skin of the green bananas, clean them and place them in a pan of warm water. Add salt and chicken flavored seasoning to the water. Cover the pan and let it boil until bananas are thoroughly cooked. A good way of knowing if it is properly cooked is by pricking the bananas with a fork. If it is soft, then your green bananas are ready. Let the green bananas stand in the pot and let it cool down slightly.

Now you are already half way done preparing your green fig and salt fish dish. It's now time to prepare the salt fish.

First you must clean salt fish under running water. When you are done, cut it into several small pieces, place in a pan to boil in adequate water for 20 minutes. Remove salt fish from water and place it in a container of cool water. When your salt fish has cooled down, shred it and place in a bowl.

Take a medium sized frying pan and put your 1/4 cup vegetable oil in it and let it get warm. Add celery, parsley, onion, garlic and peppers in the pan of warm oil. Ensure that all the seasoning is covered in the hot oil. Stir continuously for approximately two (2) minutes then add salt fish and mix them together in the frying pan.

Before turning off your stove, taste to see if it has enough salt because the salt is what that brings out the flavor. If not, then sprinkle a bit of salt in your mixture and stir thoroughly. And now your green fig and salt fish is all done. The moment of truth has finally arrived. Well, not quite yet. You must serve it. So here is how you serve it.

Remove the bananas form the water, place a few chopped ones onto a plate and add as much salt fish as you would like on top it, add a light salad on the side and you're all done. Just remember to serve warm.
