The main food dishes in St Lucia are green fig and salt fish, which is the national dish of St lucia.

My favorite dish is bullion with dumplings. That is a combination of ingredients all placed in one pot. Ingredients like, peas, callaloo leaves, spinach, irish potato, powdered noodle soup, celery, onion, garlic, pepper and other seasoning.

An other dish that is popular is the breadfruit and sardines. Now that's not the sardines you get in the can, they taste different. Well if that's all you have then I guess that's OK. Those sardines are salted and left to dry in the sun. When they are dry, they are roasted and the scales are removed.

Sardines are really easy to prepare. After you roast them, you cut up your seasoning, Onion and garlic with some curry will do and you stew it in a pan or skillet.

Many St Lucians like the a dish called the one pot. The main ingredients in a one pot is green bananas and chicken or fish. All you have to do is to peel your green bananas, put them in a pot, add you meat to it and a piece of cabbage if you desire and that's it. But let me say how good this taste. Well you should try it.

A very tasty breakfast dish is the hot bakes and cocoa tea. The cocoa tea is made from grinned cocoa with some cinnamon and milk. It taste much better than the ones in the can. The bakes are made with flour, salt, sugar, butter and baking power or yeast and then fried.
