Best St Lucia Fruit Cake Recipe
The St Lucia Fruit Cake most commonly known in St Lucia as Black Cake is the cake that you must have. If you’ve never tasted it then you have missed out on something delicious. If you have tasted it and you have always wanted the recipe so you can prepare it yourself then you’re in for a treat.
One of the tradition in St Lucia is to have most, if not all households preparing St Lucia Fruit cake at Christmas time. Some persons would have their fruits soaking in alcohol for months before they bake their cake.
Soaking your mixed fruits in alcohol is one of the main aspect of this recipe because this will determine how delicious you cake comes out.
Let me add that there is no Christmas complete in St Lucia without persons having their fruit cake. Persons who did not have the time to bake would be asking their friends for their share of black cake. It is totally a must have especially around Christmas time.
Although the fruit Cake was mostly used around Christmas time previously, it is now used for special occasions like birthdays, anniversaries, weddings and other special occasions. That is just a clear idea as to how much this cake is loved and cherished by St Lucians.
This is in my opinion, the best cake ever created. I know everyone has their personal preference but I’m sure you would agree with me after you’ve tried recipe. You may have a new favorite cake after you try this one because this one has my vote hands down.
1lb Recipe
Ingredients:
31/2lb Margarine
3/4lb Brown sugar
5 Eggs
8oz Currants
4oz Cherries
Mixed Peel (opt)
1lb Self Raising Flour
Browning
12oz Alcohol
1tbsp Almond Essence
2tsp Ground Cinnamon
1/2tsp Nutmeg
1/2tsp Salt
1cup Liquid
Method:
(1)Soak fruits as long as desired in alcohol.
(2)Preheat oven to 215c when cake begins mixing, drop temp to 140c.
(3)Sift together flour, cinnamon, nutmeg and salt.
(4)Cream the margarine and sugar for about 40mins using an electric mixer.
(5)Add the lightly beaten eggs a little at a time to the butter and sugar mixture.
(6)Add essence and browning.
(7)Stir the flour and fruit mixture into the creamed batter in alternate batches. DO NOT BEAT THE MIXTURE.
(8)Pour into greased baking pan.
(9)Bake for two hours or until skewer inserted comes out clean.
(10) (Optional)
Pour alcohol over cake just as it comes out of the oven.
